This week’s cocktail comes to us from Prairie Rose, cocktail blogger from the popular blog which recently won Saveur Magazine’s Reader’s Choice Best Cocktail Blog 2014. Her cocktail, the Brighton Beachcomber, has a couple of my favorite flavors in it: ginger and lime, but it also has coconut water and tequila! To me it sounds a little bit like a distant relative of a margarita. I found it to be very tasty and I love the pale green color. While I’m being a bit superficial, I must say that an added bonus of this cocktail is the beautiful Canton bottle. Just seeing it on my cocktail cart makes the drink worth it! - 2 ounces blanco tequila
- 2 ounces coconut water
- 1 ounce ginger liqueur (Canton works well)
- 1/2-1 ounce lime juice (to taste)
- 4 thin slices cucumber (1 slice for garnish)
Make the cocktail:
Muddle three slices of cucumber at the bottom of a cocktail shaker. Add the tequila, coconut water, ginger liqueur, lime and ice. Shake until well chilled. Strain into a chilled coupe/cocktail glass. Garnish with a floating cucumber.
Why Prairie loves this cocktail: I have a lot of friends who hate the taste of coconut water on its own. But I’ve helped to turn many a hater into a lover by sneakily adding it into cocktails! I’ve found it to be similar to how clarified milk can be used in a drink. It tends to be a pretty great mixer because it adds just a little nuttiness and slight sweetness and helps to smooth out the edges a little in a cocktail – especially with bright ingredients like citrus and ginger. The lime and tequila evoke a summer margarita and the ginger gives it a kick. And in the heat of the summer, I want all of my cocktails to have cucumber in them!
